UPAL Cooperative Cisternino was established in 1956 when 22 wine producers, gathered on a warm August day, decided to give dignity to their work and the right valor to their products.
Since then we are now more than a thousand members, all of us with the same goal of creating a dynamic wine cooperative reactive to the economics and our territorial needs.
Our land is the center of everything. The wonderful Itria Valley allowed us to create flourishing vineyard and olive groves unique in their variety. The soil is characterized by its classic red color given from the residues of dissolution of clayey rocks, composed by oxides and hydroxides of steel and aluminum.
The soil of the Itria Valley, with its high levels of potassium and its relative lack of organic substance, has a perfect balanced substrate ideal to grow grape varieties for the production of fine white wines.
In the Cooperative are processed more than 3.000.000 pounds of grapes, of different types and all them coming from the Itria Valley. From the grapes conferred we obtain different red, rosè and white wines like the Locorotondo and Martina DOP, Salento and Itria Valley IGP. Significant is also our sparkling wine production, with sparkling and semi-sparkling wines IGP Itria Valley and Salento also in the rosé version.
Our land is a place full of opportunities, beauties and challenges that we always faced up with strength and sacrifice. We have harvested though all its splendid fruits, as a reward for our efforts to make profitable this karst area, abounding only in stony ground and rocks, and deprives of surface water.
